Southern Wilted Lettuce Recipe with Hot Bacon Dressing

But a search on the internet also mentions the dish may have originated with German immigrants or even with Italian cooks. Whatever the beginning, this combination of fresh greens and bacon grease is delicious. Don&#8217;t let the words &#8220;bacon grease&#8221; scare you away &#8211; a serving of this salad has only 32 calories!</p>

Serves: 4-6 servings


Ingredients
4-5 strips bacon, cooked and crumbled
8 cups lettuce, shredded
3-4 green onions, thinly sliced
salt and freshly-ground black pepper
2 Tbsp melted bacon drippings
2 Tbsp apple cider vinegar
1 Tbsp sugar*
1-2 radishes, thinly sliced

Step by Step Instructions
  1. Fry (or bake) 4 to 5 strips of bacon; drain and crumble the bacon and reserve for use as a garnish.
  2. Combine lettuce and green onion (and radishes, if desired) in a large bowl; season lightly with salt and pepper.
  3. Combine the dressing ingredients in a saucepan and heat to boiling point; pour over the shredded lettuce mixture. Taste and adjust seasonings. Toss to mix. Serve at once. If desired, garnish with bacon and slices of hard-boiled eggs.
  4. *For a dressing that is not as sweet, use less sugar or leave it out entirely.
