Tortilla Soup

Vegan!
Ingredients

onions, 1/4'd and sliced
6-8 cloves
garlic, minced
1/2 tsp
salt
1/4 tsp
ground black pepper
6 cups
tomatoes, diced (or cherry toms)
3-5
carrots, diced
4 cups
vegetable broth
1 tsp
cumin
t tsp
paprika, ground
1 cup
green/red/paprika pepper, diced
1/2 cup
green olives, diced
1 pkg
Seitan (WheatMeat, White Wave brand)
1 cup
cilantro, rough chop
3-4 leaves
kale, chopped
1-2
jalapeno, diced (optional)
1 1/2 cup
corn kernals
Step by Step Instructions
- Add all ingredients in order to large cooking pot; simmer 45min. Serve with crushed tortilla and/or Tofutti brand Sour Supreme.
- Many ingredients can be put-up the season before.
- tomatoes (core, dice, freezer bag, freeze)
- cherry tomatoes (just pop in a freezer bag, freeze)
- ground paprika pepper (slice, dry, grind)
- green/red/paprika peppers(slice, freezer bag, freeze)
- cilantro (loose chop, plastic tub, cover w/ water, freeze, pop out and freezer bag)
- kale (wash, pat dry, freezer bag, freeze)
- jalapenos (freezer bag whole, freeze)
- corn (blanch 2min, ice water cool, slice from cob, freezer bag, freeze)
